I am a professional publisher, award winning cookbook writer, educator and photographer specialized in food, travel, lifestyle, living in Aarhus, Denmark. Sif has achieved honors such as having six books named “Best in Denmark” and nominated for “Best in the World” by the world’s biggest International Cookbook committee, Gourmand World Cookbook Awards, also known as the Oscar in the field of cooking.
Aside from creating books, teaching and taking pictures, I am the mother of three sons, a lover of cooking and baking, reading and practicing yoga. I am a firm believer in fostering a close-knit photo community and encouraging individual progression. We are all in this together.








In June 2018, when the sun rises and ribbons of golden light is casted over Paris' iconic rooftops, we'll meet up in the City of Love to spend three inspiration-packed, intimate and intense workshop days around photography, styling, superfood & healthy cooking.

'A Moveable Feast' will be both market and cobbled street strolling, visits to our favorite organic, vegetarian, glutenfree, and healthy eating hotspots in Paris, delicious plant-based lunches and dinners in a professional parisian photography studio as well as at carefully picked eateries in the most charming nooks of Paris, a gluten free cooking class, table setting tips, shooting sessions, theoretic classes on photography, prop hunting, aftenoon tea and talks about work-life balance, social media and how to turn your hobby into a heart-driven successful business - or to boost the one you already have. 

During the workshop you will learn how to:

Our main base during the workshop we will be Sandra's beautiful studio in the heart of Paris packed to the brim with awe-provoking props, backgrounds...

she will walk you through the process of a food shoot from camera settings to food on the plate to the final edit.This will be followed by a demonstration of creating a food photograph from prop selection to composition to food styling.

With cold spumante in the glasses the retreat will kick off will with a ‘Meet & Greet’ to get to know one other. We will serve you a festive dinner made by our Italian gourmet cook and celebrate our first evening together.

The next morning we will tell you about our approach to food & street photography and styling, and then dive right in to some hands-on workshopping. One element of the workshop that day is to stroll through our neighborhood to the beautiful food court at Campo de’ Fiori to shoot the greenest vegetables and all the beautiful fruit, then select some fresh fruits, and berries to bring home and make the loveliest Italian pastries of – to style and shoot and then savor together with a nice cup of tea later in the afternoon - after having had the most delicious lunch at a 'trattoria eccellente'. 

We will invite you out for breakfast an early morning and afterwards to explore Rome’s biggest flea market, where we will introduce you to the some of the old, charming stands with props and antique linen. We will then stroll around the streets of Trastevere, the old, picturesque part in the heart of Rome, learning about street photography, and have a long lunch at another of our favorite trattorias – just to mention a few of all the activities we have planned for you.

During our three days together, you will get new tools and guidance to help improve your photography and styling, regardless of your skill level. We will work on our DSLR, and for those for interested, we will guide you through successful shooting and editing on iPhones as well and talk about how to work successfully on the social media scene.

Through hands-on photo assignments across three days, you will learn about our workflow and our process from how we conceive a shot and execute. We will teach you how to tell enchanting food and street stories that really move and appeal to your audience. We will share our stories and experiences transitioning from passionate amateurs to passionate professionals, and through the entire three days we will talk together and share ideas and projects for the future.

Our main goal for the retreat is to give each participant a magnificent experience of both workshops, sensing the city, savoring good food made from the freshest produce and to give her/him a clearer idea of not only how to style and shoot, but also how to find her/his own voice within photography and styling.

This course is aimed at anyone interested in food and street photography and in styling food, flowers and props - from the amateur or professional  bloggers to those looking to break into the industry on a professional basis, or even those who just love posting images of gorgeous food that they eat. Beginning May the Roman Summer Feats's Facebook group will open for the partecipants to communicate e.g. about sharing taxis from airport and other practicalities.

Signe Bay is a Danish born professional visual aesthete who works in the field of food and lifestyle photography, styling, recipe developing and prop hunting. Signe is based in Copenhagen, but has lived in Rome and regards the eternal city as her second home. Signe’s aesthetic sense is consistent in her work. She is drawn to all things beautiful and loves to spot, create and communicate beauty to people. Just recently Signe quit her fulltime job as a graduate teacher and is now working full time as a visual aesthete and storyteller.

Sif Orellana is a Danish born professional award winning cookbook writer (10 cookbooks), publisher and photographer. Her latest family cookbook, was in June 2015 named number 2 in “Best in the World” by Gourmand World Cookbook Awards. She is currently working on her first book for the American market, named “My Happy Danish Kitchen”.

Afternoon strolling in the small, hidden corners in the back of Trastevere, followed by styling and shooting sessions of delicious homemade Italian pastries and lots of beautiful flowers in the dim library light in a big, authentic apartment with antique tiles on the floors in the very heart of Rome.  invite you to join us for an inspiration-packed 3-day healthy cooking, photography, styling & props workshop led by French cookbook writer, stylist, photographer, and recipe developer Sandra Mahut and  photographer, publisher, award-winning cookbook author Sif Orellana. We are so excited about this retreat and have put our hearts and souls into creating the most educational, inspiring and eventful program, that take your photography to the next level, give you a unique opportunity to network with colleagues from all over the world, make you enjoy great food and indulge in the exquisite nature of the island.  

We'll spend our days eating long meals together outdoors, learning photography & the art of visual storytelling, and enjoying conversation & discussion with one another as well as exploring all the island has to offer—sailing, fresh seafood, and gorgeous beaches. The villa we'll call home during the retreat is a few minutes walk from a beach, and tapas, cava, and sun promise to be plentiful.

We plan to allow plenty of down time for reading & writing, napping, swimming, discussions, photo editing, sun bathing & sipping, or simply doing nothing at all. There will also be a watercolor painting class with a local artist, a sunset beach picnic, and a paella cookout. 

The purpose of this retreat is to recharge, rejuvenate, relax, and reconnect. Creativity can only blossom if we allow ourselves to be still once in a while; we see more clearly when we slow down & ideas come fresh. 

What this won't be is a hectic, highly structured "workshop"—it's truly a retreat. Both Carolina and Beth will be teaching photography for the duration of the retreat to those guests that would like to learn or refine their skills. For advanced photographers this retreat is an opportunity to connect with likeminded creatives, build your portfolio, and glean inspiration from the island. 

There will be time to explore the topics you're interested in be it post-processing, learning to use a camera, slow living, visual story telling, social media, career building, or finding your own creative voice. We want this to retreat to be a living, breathing oasis of beauty & creativity in which we can respond to each of our guests individual needs.

• This is a 5 day retreat. The first day will be our arrival & welcome day with check in around 3 PM.  We will have introductions, settle in, and share a welcome dinner at the villa. The following three days will be devoted to yoga, enjoying the villa, exploring the island, photography & styling, and of course eating wonderful food! On our final day, we will share a breakfast and depart at checkout around 10 AM. 

• A note on getting there: You can fly to Ibiza and from there take a ferry to's properly off the beaten path!

Not Included: Airfare or transportation to and from the retreat. You're responsible for getting yourself to the villa and back home, but once you're there we've got you covered!

Join us for an inspiration-packed 4-day photography, styling & visual storytelling retreat led by Danish stylist, photographer, recipe developer and food writer Nicoline Olsen and Danish photographer, publisher, award-winning cookbook author Sif Orellana. We are so excited about this retreat and have put our hearts and souls into creating the most educational, inspiring and eventful program, that take your photography to the next level, give you a unique opportunity to network with colleagues from all over the world, make you enjoy great food and indulge in the exquisite nature of the island.  

We'll be staying in a huge, authentic 16th century “finca” (i.e. farm house), ‘Cas Bernats’, located on the outskirts of the picturesque city Port of Soller - a little village situated in one of Mallorca's most beautiful horseshoe harbours on the est coast. The farm house lies in the Tramontana mountains surrounded by ancient olive groves, citrus gardens, and past roman ruins - the perfect backdrop for our photography and hands-on styling sessions. The place is characterized by peace and tranquility; sheep and horses inhabit the land and chickens wander under the citrus trees, knowing its their job to provide fresh eggs for our breakfast. If you are an early bird and would like to begin the day with a swim, ‘Cas Bernats’ offers a relaxing swimming pool area, where you can enjoy a dip before breakfast and appreciate the view of mountains, the port and the sea. 

The finca has 3 shared bathrooms and 3 shared toilets (in addition to the bathrooms that belong to some of the rooms).

Throughout the workshop we will teach you new ways to style and shoot evocative food photos, capture the soul of a location (both indoor and outdoor), tell captivating food & travel stories, and learn and develop new skills to grow as a photographer. It is our goal to inspire and help you to create your own visual identity and “personal voice”. High-quality food & lifestyle photography is tricky, and we have created this workshop to share all our very best tips and tricks with you and load you with knowledge from the photographic industry. 

On the day of your arrival we will welcome you with cold cava in the glasses and delicious tapas made by our talented house chef, that cooks all our meals in the “finca”, based on organic, fresh ingredients, many of them grown in the garden belonging to the farmhouse. After the aperitif we will serve you a festive Mallorca welcome dinner and celebrate our first night together.

During the workshop we will build up the illusion that we are all part of an editorial department at an international magazine, FOOD & TRAVEL. The theme of the upcoming magazine is MALLORCA IN SPRING - a theme that the magazine wishes to cover from different angles through various features about Mallorca, lifestyle, local recipes, the people, interior decorations, beautiful corners, hidden treasures, stories and photographic expressions. Nicoline and Sif take the roles of chief editors of the editorial department and guide each attendee in the choice of her/his angle of “Mallorca in Spring”.

Throughout the retreat we will invite you on a number of excursions, where we can both style, shoot and enjoy some good meals. We will invite you on a trip to one the charming villages in the area. We will ask you to come along to the old, rural olive mill in the mountains not far from the farm house, where we will enjoy a delicious lunch together served at a long wooden table in the midst of old pottery and olive bottles. 

Each day during the workshop we will have classes and training sessions, where we will share our experiences within the photographic industry with you, teach you about styling, expression, light, trends, composition, use of props and backgrounds, editing and camera techniques and give you all the tools needed to bring your visual storytelling and photography to a higher level and help you transitioning from passionate amateur to passionate professional.

This retreat is aimed at anyone interested in food and lifestyle photography. We welcome all levels and breeds of photographers - from the culinary professionals, food and lifestyle bloggers, recipe developers, food & travel lovers and cookbook authors to those looking to break into the industry on a professional basis, or even those who just love posting images of gorgeous food & lifestyle or just wish to take better vacation photos for themselves and their family. It is our belief, that there's almost no field that can't benefit from a working knowledge of photography.

You will need to bring your camera - whatever you normally shoot food with is best. Some guests come with nothing but iPhones, others come with film cameras, yet others with point & shoots, and the majority with DSLRs. Bring also your laptop and tripod.

Nicoline Olsen has more than 25 years experience working as a freelancer in the photographic industry. Nicoline lives in Copenhagen, Denmark, with her husband and two daughters. She is the CEO and founder of Vkstockimages which is a Danish production company who produces editorial stories for magazines and other medias worldwide. Styling, text and photos are produced together as a concept. Vkstockimages specializes in lifestyle, interiors, food and DIY. She has also written four books - the last one together with her two daughters about easy and healthy food for teens. Nicoline Olsen has studied art history at Copenhagen University. 

Sif Orellana is a Danish born publisher, photographer and award winning cookbook writer (10 cookbooks) based in Aarhus, Denmark, with her family. Her latest family cookbook, was in June 2015 named number 2 in “Best in the World” by Gourmand World Cookbook Awards. She is currently working on her first book for the American market, named “My Happy Danish Kitchen”. Sif has a master's degree in literary history and mass communication, with additional post-graduate qualifications from the Danish School of Media and Journalism. She frequently appears as a chef, compère, guest speaker, lifestyle consultant and debater on Danish television channels, writes food & lifestyle articles for Danish magazines and holds talks. 

‘Cas Bernats’ lies above the Port of Soller along the North-west coast of Mallorca. Leaving the airport and arriving at the gates of ‘Cas Bernats' takes approx. 45 minutes by taxi. From Port of Soller – ‘Cas Bernats' is a 10 minute drive.
